This is a lentil brunch I created for American boy and I the other day.
It’s full of mediterranean aroma, rich in flavor and the crunchy croutons add a bit of a snack to this dish.
While light snow flakes danced outside our window, each mouthful brought me closer and closer to the South of France.
Even though I think the flavor of this dish fits great as a late fall saturday brunch, it warmed and transported us just as beautifully on a cold March weekday.
Don’t you just love food that takes you on a bit of a journey?
Some years ago, I took my niece to this magical place in the South of France.
We rented a houseboat and went on day-trips to quaint villages everyday.
One day we went biking in some green hills near the charming Isle sur la Sorgue.
The area was full of herbs and lavender that filed the air with the most delightful scent.
That’s the place I went as I ate the dish with American boy.
I guess I should have sprinklede some lavender on top to make it all complete.
Next time I’ll have to try it, as lavender adds the most delicious dash of the south of France to any dish;)
